OUR BASICS
Prosciutto crudo has always been made in San Daniele, since a long time ago. The climate made it possible and our ancestors wisely realised that.
The magic of the location
Throughout history Friulian livestock farmers could choose to rear their pigs anywhere, but they could only preserve their legs of ham using salt as they had learnt from the Celts, in San Daniele del Friuli. Nowadays PDO guidelines preserve the centuries-old characteristics of the process and protect them through the Consorzio del Prosciutto di San Daniele.
Air and water
Alpine air descends over the farthest reach of the Friulian plain and mingles with the sea air right over the course of the King of the Alpine Rivers, the Tagliamento, which mitigates diurnal temperature variation and regulates humidity creating the famous microclimate of San Daniele, a particular feature of our territory, unique and impossible to emulate.
